Christmas Gingerbread Men

Makes approx 40

150g butter
65g caster sugar
110g golden syrup or treacle
360g plain flour
1 tsp bicarbonate of soda
1 and a 1/2 tsp ground ginger
1 tsp cinnamon

For the icing
90g icing sugar
1 tbsp boiling water

In a large saucepan, melt the butter together with the sugar and golden syrup or treacle. Sift the flour, bicarbonate of soda and ground ginger and cinnamon into a bowl. Add the melted butter and sugar and mix together.

Knead the mixture for a few seconds until it comes together, adding a teaspoon or so of water if needed, but without it getting too wet. Flatten the dough slightly into a round about 2cm thick, wrap with cling film and place in fridge for half an hour.

Preheat the oven to 170ºC (350ºF), gas mark 4. Line two baking trays with parchment paper.

Remove the dough from the fridge, dust the work surface with flour and roll out the dough to about 1cm thick. Cut out with your cutter and transfer onto baking trays.  Cook for 12 minutes before cooling on a wire rack.
