1 tablespoon vegetable oil
2 large onions, peeled and cut into small pieces
2-4 garlic cloves, chopped or crushed
1/4 teaspoon mustard seeds
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon turmeric
450g carrots, cut into thin rounds
450g cabbage, cut into small pieces
1/4 teaspoon chilli powder
1/4 teaspoon cinnamon
1 tin coconut milk
salt and pepper to taste
In a medium pan, heat oil and saute onion and garlic until soft.
Add mustard seeds, cumin, coriander and turmeric
Add carrots to the pan and cook with the lid on for about 5 minutes.
Now add the cabbage and mix well
Add chilli powder, cinnamon and coconut milk, season to taste.
Put lid back on and cook for about 15 minutes or until cooked.
Serve hot with rice and nans.
