Ingredients

Knob of butter
Large onion, roughly chopped
Stick of celery, chopped
1 or 2 leeks split down the middle and chopped
3 large potatos, cut into cubes, not peeled!
600ml milk
200ml stock
2 fillets smoked haddock cut in chunks
chopped parsley

Method

Take a large pan and melt the butter. Add the onion and allow to sweat for a few minutes. Add the celery and leeks and stir to soften. Add the potatoes, stirring to coat in butter. Add the milk and stock, bring to a gentle simmer and add some black pepper. Cook for about 10 minutes or until the potatoes are just softening. Add the chunks of fish and return to the boil. Remove from the heat and serve with the parsley sprinkled over the top.
