2 tablespoons oil
1 onion, finely chopped
2-3 cloves garlic, crushed
2.5cm piece root ginger, finely chopped
2-3 tomatoes chopped
1/4 teaspoon turmeric
1/2 teaspoon garam masala
150ml (1/4 pint) water
1 medium cauliflower, broken into florets
2 medium potatoes, peeled and cubed
salt and pepper to taste
Heat the oil and saute the onion, garlic, ginger and tomatoes for about 5 minutes or until onion is soft.
Add the turmeric and garam masala and cook for about 2-3 minutes.
Add water and stir well.
Add the cauliflower and potatoes, season well.
Stir to cover the vegetableswith the spice mixture.
Cover and simmer for about 10 minutes, stirring occassionaly, until vegetables are tender, add more water if necessary.
