This is a really simple but very visually impressive dessert for friends. For vegetarians, vegetarian glucose can be used instead (or Agar Agar). Play around with different berries and cordials. Blackberries and apple cordial are particularly tasty.
2 gelatine leaves
4 tablespoons hot water
punnet of raspberries
4 tablespoons caster sugar
Soak gelatine leaves in cold water
Dissolve the gelatine in a measuring jug with hot water from the kettle.
Add the sugar then add the elderflower wine/ cordial to make 450ml of liquid in total.
Drop a few raspberries into 6 tall glasses and fill to about a third with the elderflower syrup.
Leave to set completely, then add a few more raspberries and some elderflower syrup.
Repeat again until the glasses are nearly full to the top.
