2 large carrots, grated
1/2 small white cabbage, shredded
1/2 small onion, grated
90ml/ 6 tablespoons olive oil
30ml/ 2 tablespoons mayonnaise
1.5ml/ 1/4 teaspoon English Mustard
salt and pepper
Mix all the dressing ingredients, adding lemon to taste. Toss well with the vegetables for a perfect summer salad.
Also good with the addition of a handful of mixed peanuts and raisins and spring onions instead of normal onions.
