Chessey Baked Courgettes

Ingredients

1 medium onion
2 tablespoons olive oil
pinch of saffron
450g courgettes
100g cheese grated
2 eggs, beaten
salt and pepper to taste

Method

Preheat oven to 190C/375F/ gas mark 5

Gently fry the onion over a low heat for 10 mins, add the saffron and season to taste.

Steam the courgettes until tender, add the onions and place in a baking dish.

In a separate bowl, combine the cheese with the beaten eggs, pour over the vegetables and bake for 20 minutes or until the topping is risen and set.
