Leeks with Three Mustard and Cheese

Ingredients

3lb leeks- cut in half
2oz butter
3oz plain flour
3/4 pint milk
6oz grated cheddar cheese
1oz grated Parmesan
2 tablespoons breadcrumbs and 1oz grated cheddar for topping
1 tablespoon wholegrain mustard
1 tablespoon Dijon mustard
1 tablespoon English mustard
salt and pepper

Method

Preheat oven to gas mark 6 or 200C
Put leeks in a pan of cold salted water, bring to the boil and simmer for 3 mins or until tender
Drain and place under cold water immediately to stop the cooking process
Bring butter, flour and milk up to the boil, whisk continuously- once it is up to the boil, reduce heat and simmer for 2 mins
Add the cheese and mustard and season to taste
Put leeks in a shallow dish and pour the sauce over
Mix the breadcrumbs and cheese together and sprinkle on top of the leeks
Bake for 20 minutes until top is golden brown
