What do do with a large bag of lovely basil? Too much to be eaten in one sitting. Suggestions please…

    Pesto.

    Food process 100g basil leaves, 8 tbspn olive oil, 3 tbspn pine nuts, 2 cloves finely chopped garlic, pinch of salt.

    You can freeze at this point

    Or stir in by hand (don’t whiz) 50g cheese, 45g soft butter to finish.

    I wish I had a big bag of basil!
